Over the past few months, more and more mouthwatering businesses have opened or plan to expand all across the Auburn-Opelika area. Now, Mo’Bay Beignet Co. has joined the ranks! Owned by Tripp Skipper, the shop sits in Downtown Auburn, right by Pita Pit.
If you’ve ever visited Mobile, the shop may sound familiar to you! Its founder, Jaclyn Robinson, established the business there several years prior. She also created the recipes that Auburn residents have already started falling in love with!

Mo’Bay Beignet Co. in Downtown Auburn makes their tasty beignets from scratch daily. And they don’t skimp on the powdered sugar, either! Plus, you can amp up the sweetness with one of their signature syrups. Their flavors come in options such as buttercream, cinnamon, and seasonal flavors, like lemon syrup inspired by the iconic Toomer’s Drugs lemonade.
You can’t have beignets without coffee! The shop serves chicory coffee, café au lait, and cold brew. They also recommend putting their signature syrups into your brew for an extra special sip.

Please note that since they make everything fresh to order, you may have to factor in a preparation time of ten minutes (when they’re less busy) to an hour (when they’re really busy). Well, they say good things come to those who wait—and we agree!
